"I discovered that I have a really sharp palate. And the more I drink the more I’d like to what make me think about it. I’d like to think about the life of wine. How it’s the living things. I’d like to think what was going on the year the grapes were growing. How the sun was shining. If it rained. I’d like to think about all the people who tended and picked the grapes. And if it’s an old wine, how many of them must be dead by now. I like how wine continues to evolve. Like if I open a bottle of wine today, it would taste different that if I open it on any other day, because the bottle of wine is actually alive. And it’s constantly evolving and getting complexity and then into its peaks, like your 61. And that begins its steady inevitable decline. And it tastes so fucking good.

有天我发现自己真的有敏锐的味觉。喝得越多感受就越多。我喜欢想像酒是有生命的，它的成长经历。我喜欢想想葡萄结出的那年发生过什么事情。阳光照耀。下雨了吧。想想那些照料、采摘葡萄的人们。如果是瓶陈年的酒，现在那些人都不在了吧。我喜欢酒的不断进化。就象我今天开一瓶酒，这酒一定跟在其它日子打开的味道不同。因为酒是有生命的。它不停的进化，越来越醇厚，达到顶峰。然后不可避免的缓慢衰落。它的味道真是太棒了。
